Flour contained in the preferment is part of total flour, and water contained in the preferment is part of total water. Do not count either quantity again as fresh flour or fresh water. If the formula has final-mix flour plus preferment flour, list both parts while following the formula's stated flour basis.

Prefermented flour, or PFF, is calculated as:
