A mixer genuinely earns its counter space in three situations. High-hydration doughs are difficult to manage by hand and much easier in a bowl with a hook turning through them. Larger batches exceed what most people want to knead manually. What mixer marketing leaves out is expert criticism. KitchenAid's published method runs about 20 seconds on high speed until a ball forms, another 20-30 seconds of pulsing after you turn the dough in the bowl, and about 30 seconds of hand kneading to finish. America's Test Kitchen calls the food processor "by far the fastest, easiest way to knead almost any dough," and its guide on the technique carries the subtitle "You don't need a stand mixer to make great thin-crust pizza or fluffy dinner rolls."

The catch is the one that always accompanies speed. Friction heat builds quickly, and the blade can shred gluten strands if you over-process, so dough quality depends on stopping at the right moment. For small batches and tight budgets, the processor is a legitimate method in its own right, not a consolation prize.
