The dough has been in the fridge three days longer than planned. It smells faintly of beer, the surface has gone gray, and the bubbles look tired. Bake it, try to fix it, or throw it out?

Yes, pizza dough can go bad. But the three signs in that scenario are almost never spoilage. An alcohol smell, a gray surface, slow bubbles, and even a loose, slack texture are expected results of a long cold ferment. True spoilage is narrower and uglier: fuzzy or colored mold spots, a rancid or sharply acetic odor, or a slimy surface film. Those are the automatic discard signs.

Why pizza dough smells like alcohol (and when it's fine)

Is gray pizza dough safe to eat? It depends on the pattern

Experts appear to disagree about gray dough, and the disagreement is real but narrow: they are describing two different patterns.

The first is a uniform gray cast on dough that sat untouched in the refrigerator for several days, sometimes with liquid pooling on top or at the bottom of the container. The bakers at Artisan Bread in Five are direct about it: "As your dough stores in the refrigerator, it might develop a uniform gray discoloration and liquid on its surface or at the bottom of the bucket. This is not mold and can be safely ignored." The gray portion is often a tough, leathery skin caused by excess air in the container. Peel or scoop it off and use the creamy dough underneath, and stir in a little flour to reabsorb any pooled liquid.

The second is gray or pink discoloration or dark patches on dough that should still be fresh. PizzaLogic lists gray or pink discoloration as bacterial growth that warrants a toss, and Baking Steel points out that fresh dough is pale and smooth, so gray tones or dark patches on it signal oxidation and mean the dough should go.

One question settles it: is the gray a uniform skin on old, cold-fermented dough, or localized gray, pink, or dark patches on dough that should still be fresh? The first is safe to use. The second means discard.

Over-fermented vs. spoiled: a quality problem is not a safety problem

One is a quality problem you can rescue, the other a safety problem you cannot.

Over-proofed dough is flat, deflated, boozy or wine-like in aroma, very slack, and unable to hold shape. It is still perfectly safe to bake. What you lose is quality: it bakes into a dense, flat, cracker-like crust rather than an airy one. Many over-fermented doughs actually taste complex or pleasantly tangy, and they can be repurposed as flatbread or focaccia, where structure matters less.

Spoiled dough means microbial contamination. That is a genuine food-safety issue, and it can never be salvaged by baking, trimming, or extra rise time.

Second, baking does not make spoiled dough safe.
